I was thinking exactly the same thing this week! I made resolutions: a little less coffee, a little more green juice. (mm, could we turn this into a funky tune? ;-))
I put this salad together yesterday, with the vegetables that were lying around in my fridge. It was a speedy action, but I was pleasantly suprised! Cauliflower, by the way, what a spectaculair comeback for a vegetable nobody younger then 30 seemed to look at anymore. Mushy cauliflower with bechamel, no thank you, mam! But sinds paleo, or Ottolenghi...not sure which, it is cauliflower galore in trendy foodland! It's roasted in garlic, dressed in exotic spices, made into healthy pizza's (yours is delicious! Care to share?) and processed into fluffy clouds of grainfree rice or couscous. Even I have a renewed respect. Mjamm! Like...
Cauliflower ‘couscous’ salad with olives, tomato’s and goatcheese
half a cucumber
2 sticks of celery
2 ripe tomato’s
handfull of kalamati-olives
tablespoon of capers
half a tablespoon dried italian herbs
handfull chopped fresh basil
about 50 grams of soft, crumbly goatcheese
juice of 1 lemon
freshly grounded seasalt and black pepper
Put the cauliflower in a food processor and pulse them into a nice fluffy substance resembling couscous. Dice the cucumber, celery and tomato’s. Crumble the goatcheese with your fingers. Mix the olive oil, lemonjuice and dried green herbs and keep aside. Mix cauliflower, vegetables, olives, capers, basil and cheese together in a nice bowl and add the lemon/oil dressing. Top with fresh salt and peper.
